How To Make Wild Garlic Salt Using Fresh Wild Garlic
Homemade wild garlic salt preserves the delicate flavor and vibrant green color of wild garlic long after the season ends.
It’s far superior to store-bought versions, which often contain too much salt and too little garlic, and it makes a fantastic finishing salt.
All you need is sea salt, fresh wild garlic, and a food processor. The recipe is below!

Wild garlic, Ramps, Ramsons, Bear leek, Bear’s Garlic, Cow’s Leek…
Wild garlic (Allium Tricoccum ) is also known charmingly as Bear’s garlic or Bear leek. It’s even called Cows leek in some parts of the world, and more commonly Ramsons or Ramps in the US.
We call it simply Ramslök(Allium Ursinum) here in Sweden.
It’s a broad-leaved garlic / wild onion with a delicate garlic flavour and a fresh, earthy aroma.
Ingredients

1 small bunch/ 2 oz/ 50g of Fresh wild garlic leaves – Remove the stalks as they contain a lot of moisture, which slows the drying process. But don’t throw them away! You can sauté them or use them to make Wild Garlic Pesto or Wild garlic Oil!
1 cup/ 10 oz/ 300g Coarse sea salt. You can use finely ground sea salt, but I prefer coarse salt for this recipe as some of the texture remains even after blitzing.

The foraging season for wild garlic is short, but you can usually pick it up in the grocery store and farmers' markets in spring if you don't have wild garlic growing nearby.
Instructions
1. Remove any roots or debris from the wild garlic leaves. If necessary, you can rinse the leaves under cold water and use a salad spinner and a clean tea towel to pat them dry.


2. Roughly chop the leaves and place them in the food processor together with roughly half of the salt. Blitz to create a wild garlic paste.


3. Add the remaining salt and blitz briefly to combine. You can blitz a little longer if you prefer a finer finishing salt.


4. Spread the salt blend on a baking tray lined with parchment or a large plate and leave it in a warm place to dry completely overnight in the oven with the door slightly open and the light on for a little added warmth. To help with drying, you may need to use a fork to break up the salt mixture occasionally, depending on the water content of the paste.

5. When the mixture is completely dry, break it up and transfer it to a pestle and mortar. Grind to your preferred consistency. Alternatively, you can use a food processor for this step, but a pestle and mortar will give you more control over the end result. If you find the flavor to be too strong, you can mix in a few grams of salt to dilute it.

I find that making a small batch is plenty to last us through the summer grilling season but make more if I plan to give some away. You can adjust the ingredient amounts in the recipe card below if you wish!
Store in a cool dark place for up to 6 months. The salt will still be fine after 6 months but will begin to lose flavour.

How to use your homemade wild garlic salt

Honestly, this wild garlic sea salt is the perfect seasoning and finishing salt for just about any savory dish! You can just replace your table salt altogether or use this as a finishing garnish for special occasions.
Here are some of our favorite ways to use it:
- As a finishing salt that adds color and flavor.
- On roast potatoes, fresh from the oven.
- With all kinds of eggs (scrambled, boiled, poached, etc.)
- With or in mild fish dishes like steamed or baked cod.
- Added to salad dressings or olive oils for a subtle garlic flavor.
- Use as a BBQ rub or add to a marinade for grilled meats.
- It also makes a simple, thoughtful homemade gift, perfect for the food lovers in your life!

Variations to try
Our daughter loves experimenting with herb salt, and here are a few of her latest wild garlic creations:
- Lemon & Herb: Wild garlic and finely grated lemon zest make a bright, fresh seasoning, especially delicious on fish.
- Spicy BBQ: For a flavorful rub, add up to ¼ teaspoon of chili flakes to your wild garlic sea salt. (Remember to taste the chili flakes first—potency varies!)
